With all the benefits of its main ingredient, creating a tomato-based soup can only be healthy. The choice of ingredients you use alongside its base is also key to making the soup even richer and more nutritious. This is our suggestion.


– 5 ripe tomatoes (peeled)
– 1 sweet potato (large)
– ½ courgette
– 1 onion
– 1 clove garlic
– 1 pack of soy cream
– olive oil to taste
– salt to taste
– pepper to taste. (optional)


In a pan put a dash of olive oil together with the chopped onion and garlic. Let it sauté for a while and place the sweet potato in pieces. Cover with water, add a pinch of salt and let it cook.

When the sweet potato starts to get more tender, add the courgette and tomato and let it cook until all the ingredients are soft and fully cooked.

At this stage, pass the hand blender and reduce the mixture to cream, until smooth and homogeneous.
